Will She/Won’t She: The Spoufflé
I found this recipe for Spinach, Penne and Cheese Spoufflé in the River Cottage Veg Everyday cookbook. This is fast becoming my favourite cookbook, as the recipes are yummy, healthy, and mostly easy to make. Never having made a spoufflé before, I was a little nervous. I didn’t have the correct dish, but gave it a go anyway.
Although it came together really quickly, this was one of those recipes where I’m saying to myself the whole time, “Is this right?” My béchamel sauce was like cement until I added the egg whites at the very end. I poured it into the dish with a sense of foreboding, mentally going through the stock of the fridge for emergency back-up meals. Of course, I left out the salt as this was a dish that Baby would be eating.
Imagine my surprise when it came out looking absolutely gorgeous and smelling like heaven. But looks can be deceiving and the real test would be the Baby-o-meter.
Well, I’m batting 2 for 0 now because she loved this one, too. And even better, she slept through the night after eating it. James and I have a theory that her enjoyment of dinner dictates whether she sleeps through or not. The magic recipe has hitherto been spaghetti bolognese, which is guaranteed to get us all some quality shuteye. I’m adding this to the list.
And it heated up really well a couple days later for a leftover lunch for Baby and me (what was left of it – we almost ate the whole dish the first time around!)
